Spaghetti with Butter, Garlic, and Almonds…

Standing in the kitchen, looking somewhat lost, Joshua approached me and asked if I wanted dinner ideas…

Me: Yes please!!

JRoc: How about some spaghetti?  With butter and garlic sauce?

Me: Of course… anything else?

JRoc: Hey, mommy, we have almonds!  Do you think it would taste good with almonds?

We wouldn’t be *us* if we didn’t give it a try now, would we? :)


Ingredients:

  • 2 oz thick spaghetti, cooked as directed on package
  • 4 tbsps unsalted butter
  • 1 tbsp minced garlic
  • 1 tbsp slivered almonds
  • 1 semi-soft cheese (those little, red Baby Bel cheese)
  • salt & pepper to taste

Directions:

  1. Heat a large, nons-stick pan over medium-low heat and add butter and garlic.
  2. Cook until butter is melted… careful not to let it burn!
  3. Add almonds and continue cooking for about a minute, stirring frequently
  4. When pasta is finished cooking, crumble cheese on top of hot pasta, then pour the butter, garlic, and almond sauce
  5. Add salt and pepper to taste.

A simple dish, with a big, bold, and buttery flavor! Success :)
